Has anyone seen those single serve cakes in the grocery store lately. First of all genius! And secondly, where were these 10 years ago when I was in college or single living on my own. Back in the day, we had it tough, we had to make the whole cake which tested our willpower and built character, or it made us fat. Either way, we had to make an entire cake, well things have changed. Now you can buy these single serving cake mixes right off the shelf at the grocery store, and they are fantastic!
Of course I needed to find an even easier way, because well… that’s what I do. I always have a box of cake mix at home, so I started to mix things up and came up with this super simple, easy single serving cake mix that you can use the cake mix in your pantry.
- 3 Tablespoons Cake Mix (your choice, I like chocolate)
- 2 Tablespoons Water
- Handful Chocolate Chips (optional)
- Fresh strawberries/raspberries (optional)
- Mix chocolate cake mix and water together in a microwave safe mug/cup
- Fold in chocolate chips
- Cook in Microwave for 60-90 seconds
- Top with fresh strawberries or raspberries and enjoy!
It is seriously that easy, no oil, milk, or eggs needed. You try out the recipe tonight and you could be eating cake in under 2 minutes. Because it is one 3 parts cake mix to 2 parts water, you can also make your single serving be as little or large as you would like. I also love that you don’t need frosting with this recipe, the cake turns out moist and the addition of chocolate chips makes it a little gooey inside.
Box cake mixes have been a staple in my house, now I open a box and store the leftovers in one of my OXO air tight containers. I even have these cute reusable labels that make me look extra fancy and organized. And these oversized mugs on Amazon are the perfect size to make single serving cakes.
